- 12 large eggs
- 1/4 cup mayonnaise
- 1 large avocado ripe (or 1 cup mashed)
- 1 tablespoon lemon juice or lime juice
- 1 tablespoon dill pickles chopped
- 1 tablespoon yellow mustard
- 1/4 teaspoon celery salt
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Place the eggs in a large saucepan and cover with water. Bring to a boil.
- Boil the eggs for 12 minutes, then remove and place in an ice water bath.
- Once cooled, peel the eggs. Slice in half and scoop out the yolks into a bowl.
- Mix the egg yolks with mayonnaise, avocado, lemon juice, dill pickles, mustard, celery salt, salt, and pepper.
- Taste the mixture and adjust the seasoning if necessary.
- Use a pastry bag to fill the halved egg whites with the yolk mixture.
- For added flavor, top with paprika and crispy bacon if desired.
- Store in the refrigerator until ready to serve.
