- 2 cups powdered sugar
- 1 tablespoon milk

- 1 teaspoon fresh lemon juice
- 1/2 teaspoon fresh lemon zest
Instructions
- Preheat the oven to 350 degrees F and line a 9 x 13-inch baking pan with parchment paper.
- In a large bowl, beat the softened butter and sugar until fluffy, then mix in the eggs, vanilla extract, lemon juice, and lemon zest until well combined, scraping down the bowl as needed.
- Gradually add the flour, baking soda, and baking powder, mixing until a thick dough forms. Be careful not to overmix.
- Spread the cookie dough evenly in the prepared baking pan. Bake for 20-25 minutes, or until set and lightly golden brown. Allow cooling for a few minutes.
- For the frosting, beat together the butter, powdered sugar, milk, vanilla extract, lemon juice, and zest in a medium bowl. Adjust consistency with more milk or powdered sugar as needed.
- Once cooled, generously spread the frosting on top of the cookie bars. Optionally, top with sprinkles and cut into square bars. Enjoy!
