  • 1 lb plant-based ground beef
  • 1 24-oz tub whole milk cottage cheese
  • 2 tbsp cornstarch
  • 1 24-oz jar marinara
  • 1 cup water
  • 3 cloves garlic, minced
  • 1 tsp italian seasoning
  • 12 oz oven-ready lasagna noodles
  • 8 oz mozzarella, grated from block

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large sauté pan, add a splash of oil and crumble the plant-based ground beef, cooking until browned.
  3. Blend the cottage cheese with cornstarch until smooth using a blender.
  4. In a 9×13 inch casserole dish, combine the cooked beef, marinara, water (swirl to get all the sauce), minced garlic, and Italian seasoning.
  5. Break lasagna noodles into large pieces (2 to 3 inches) and stir them into the sauce, then flatten gently in the dish.
  6. Pour the cottage cheese mixture over the pasta evenly. Grate mozzarella and sprinkle on top.
  7. Cover with aluminum foil and bake for 45 to 50 minutes until pasta is al dente and sauce bubbles. Uncover and bake for an additional 15 minutes until the cheese is slightly browned.
