  • 23 tablespoons (30-45g) butter, softened
  • 1 cup (240ml) coconut milk (or water; adjust amount to achieve soft dough)
  • oil for deep-frying
  • 2¼ cups (270g) all-purpose flour
  • ¾ cup (120g) cornmeal
  • 2 teaspoons (12g) baking powder
  • ½¾ teaspoon (2.5-4g) salt
  • 23 tablespoons (25-40g) sugar
  • 23 tablespoons (28-42g) butter, softened
  • 1 cup (240ml) milk or water, adjusting the amount to achieve a soft dough
  • 1 teaspoon (5g) nutmeg (optional)
  • oil for deep-frying

Instructions

  1. In a large bowl, combine the dry ingredients: flour, baking powder, salt, and optional sugar for fried dumplings. For festivals, mix flour, cornmeal, baking powder, salt, sugar, and nutmeg.
  2. Add softened butter to the dry mixture, create a well in the center, and pour in the milk.
  3. Combine the ingredients thoroughly and knead the dough for 30 seconds to 1 minute until it becomes soft.
  4. Divide the dough into 12-14 equal parts, set aside, and let them rest for about 10 minutes.
  5. For dumplings, shape each piece into balls. For festivals, roll the pieces into logs, creating pointy ends and a lengthwise slit.
  6. In a large saucepan, heat about 3 inches of vegetable oil on medium heat to 350℉ (180℃).
  7. Fry the dumplings (or festivals) until they turn golden brown, approximately 7 minutes or more depending on size. Use a slotted spoon to remove them and drain on a paper towel. Allow them to cool before enjoying.
