  • 4 boneless, skinless chicken thighs or breasts pounded to even thickness
  • 1 cup buttermilk
  • 1 teaspoon hot sauce
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • vegetable oil for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon dijon mustard
  • 2 teaspoons pickle juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • salt and pepper to taste
  • 4 brioche buns lightly toasted
  • 4 slices dill pickles
  • 1 cup shredded iceberg lettuce
  • butter for toasting buns

Instructions

  1. Place chicken thighs in a bowl.
  2. In a small bowl, mix buttermilk and hot sauce. Pour over chicken, turning to coat fully.
  3. Cover and refrigerate for at least 1 hour, preferably overnight.
  4. In a shallow dish, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.
  5. Remove chicken from marinade, letting excess drip off.
  6. Dredge thoroughly in flour mixture, pressing to adhere.
  7. Place on a plate and let rest for 10 minutes.
  8. Heat oil in a deep skillet or fryer to 350°F.
  9. Carefully add chicken pieces to hot oil and fry until golden brown and internal temperature reaches 165°F, about 4-5 minutes per side. Remove to a paper towel-covered plate to drain.
  10. In a small bowl, whisk together all sauce ingredients until smooth. Chill until ready to use.
  11. Butter the brioche buns and toast until golden.
  12. Spread prepared sauce on both sides of the bun.
  13. Add lettuce, pickles, and hot fried chicken.
  14. Top with the other half of the bun and serve hot with fries or slaw.
