Ingredients
Scale
- 1 ¼ cups (150g) powdered sugar
- 1 tablespoon (8g) all-purpose flour
- â…“ cup (80ml) whole milk
- 1 cup (227g) unsalted butter, softened
- 1 teaspoon (5ml) pure vanilla extract
- â…› teaspoon salt
- 2 teaspoon meringue powder
Instructions
- Ensure the butter is softened at room temperature—not too soft and not greasy.
- In a 1 quart saucepan, whisk together powdered sugar and flour. Slowly add milk, whisking until the mixture thickens slightly and blends well. Avoid boiling, and after about 5 minutes, turn off the heat when small bubbles form.
- Transfer the mixture to a clean bowl and refrigerate until it cools, ensuring it reaches room temperature.
- In the bowl of an electric mixer, whip the softened butter for 10 minutes on medium-high speed until it becomes pale and creamy.
- Gradually add the cooled sugar mixture in increments while mixing on medium speed, scraping down the sides as needed until thick and fluffy. Incorporate vanilla and salt at the end.
- Use the buttercream immediately, or cover the bowl to keep it fresh if not using right away. Optionally, add meringue powder for additional stability.
