Ingredients

  • 1 cup soy sauce low sodium recommended
  • 1 cup pineapple juice
  • 1/2 cup ketchup
  • 1/3 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tbsp fresh ginger grated
  • 4 garlic cloves minced
  • 2 tsp sesame oil
  • 1 tbsp sriracha or chili garlic sauce
  • 34 lb. whole chicken split in half
  • 3 cups pineapple juice (for marinating)
  • 1 cup water (for marinating)

Instructions

  1. In a small saucepan, combine soy sauce, pineapple juice, ketchup, brown sugar, rice vinegar, ginger, garlic, sesame oil, and sriracha over medium heat. Whisk until sugar dissolves.
  2. Bring the mixture to a gentle simmer and cook for 10-12 minutes, stirring occasionally until slightly reduced. Remove from heat and let cool to room temperature.
  3. Divide the sauce into two equal portions. Store one portion in a container and combine the other portion with 3 cups of pineapple juice and 1 cup of water in a resealable bag or airtight container with the chicken as marinated.
  4. Refrigerate the chicken in the marinade for 2-4 hours. Upon removal, pat dry and let rest uncovered in the fridge for 30 minutes before cooking.
  5. Preheat the smoker to 275°F. Hang the split chicken skin-side out or place it on the grill grates over indirect heat.
  6. Cook the chicken undisturbed for 45 minutes, basting with the reserved marinade every 10 minutes after the initial cooking time.
  7. Check doneness with an instant-read thermometer; when the breast reaches 160°F and thigh 175°F, apply a final coat of sauce and allow to get tacky.
  8. Remove the chicken and let rest for 10 minutes before slicing and serving.

Notes
