Ingredients

  • 1 tablespoon butter
  • 2 celery stalks
  • 2 carrots
  • ½ onion
  • 2 tablespoons chicken 'better than bouillon'
  • 1½ pounds chicken breasts
  • 32 ounces chicken broth
  • 3 tablespoons butter
  • 10.5 ounces cream of chicken soup
  • 10.5 ounces cream of celery
  • 24 ounces frozen homestyle egg noodles

Instructions

  1. Melt 1 tablespoon of butter in a large heavy-bottomed pan over medium heat. Dice the celery stalks, carrots, and onion, then add to the pan and cook until softened.
  2. Stir in 32 ounces of chicken broth, 2 tablespoons of chicken 'better than bouillon', and the 1½ pounds of chicken breasts. Bring to a boil over high heat, then reduce to medium and cook for about 15 minutes, or until the chicken is fully cooked. Remove the chicken from the broth and set aside.
  3. Add 24 ounces of frozen homestyle egg noodles to the broth, bringing it back to a boil over high heat. Reduce the heat to medium and cook the noodles for about 25 minutes, stirring occasionally. While the noodles cook, shred the chicken.
  4. After the noodles have cooked, stir in the remaining 3 tablespoons of butter, along with the 10.5 ounces of cream of celery and 10.5 ounces of cream of chicken soup, mixing well. Add the shredded chicken and let it simmer for an additional 10 minutes.
  5. Remove from heat and let it rest for 10 minutes before serving, allowing the sauce to thicken.
