- 1–2 tbsp neutral oil
- 1 white onion diced
- 3 cloves garlic minced
- 1 small red bell pepper seeded and diced
- 1 small green bell pepper seeded and diced
- 1 small carrot peeled and small diced
- 1 tbsp tomato paste
- 1 can diced tomatoes 14-15 oz or 400g
- 2 bay leaves
- 1 tsp smoked paprika
- 1 to 1 1/2 tsp cumin powder
- 1 tsp chili powder or chili flakes adjust to desired heat
- 1–2 tsp sugar adjust to taste
- 1 1/2 cups dried lentils i used easy-cook lentils
- 4–6 cups vegetable broth plus more as needed
- salt and pepper to taste
- fresh lemon juice to taste
- chopped parsley
- chopped parsley or cilantro
- homemade pita or other bread of choice
Instructions
- Heat a large pot over medium heat and add the neutral oil.
- Add the diced onion to the pot, cooking for 3-4 minutes until softened and translucent.
- Incorporate garlic, red bell pepper, and green bell pepper, cooking for an additional 2-3 minutes until softened and aromatic.
