  • 12 tbsp neutral oil
  • 1 white onion diced
  • 3 cloves garlic minced
  • 1 small red bell pepper seeded and diced
  • 1 small green bell pepper seeded and diced
  • 1 small carrot peeled and small diced
  • 1 tbsp tomato paste
  • 1 can diced tomatoes 14-15 oz or 400g
  • 2 bay leaves
  • 1 tsp smoked paprika
  • 1 to 1 1/2 tsp cumin powder
  • 1 tsp chili powder or chili flakes adjust to desired heat
  • 12 tsp sugar adjust to taste
  • 1 1/2 cups dried lentils i used easy-cook lentils
  • 46 cups vegetable broth plus more as needed
  • salt and pepper to taste
  • fresh lemon juice to taste
  • chopped parsley
  • chopped parsley or cilantro
  • homemade pita or other bread of choice

Instructions

  1. Heat a large pot over medium heat and add the neutral oil.
  2. Add the diced onion to the pot, cooking for 3-4 minutes until softened and translucent.
  3. Incorporate garlic, red bell pepper, and green bell pepper, cooking for an additional 2-3 minutes until softened and aromatic.
