- 2 ½ oz (70g) high quality semisweet chocolate (minimum 55% cocoa and up to 65%)
- 2 tbsp (30ml) hot water
- ½ cup (130g) natural drippy smooth peanut butter (no sugar added)
- 2 tablespoon (30ml) maple syrup
- ½ cup (50g) fine almond flour
- 1 tablespoon powdered sugar (optional)
- â…› teaspoon salt
- 6 oz (170g) pure white chocolate
- 1 teaspoon (5g) coconut oil
- ¼ teaspoon matcha powder
- blue gel food coloring
- 1 teaspoon (2g) cocoa powder
- 2 teaspoon (10ml) hot water
Instructions
- Chop the semisweet chocolate finely and place in a heatproof bowl. Heat 2 tablespoons of hot water and pour it over the chocolate.
- Cover and let it sit for a minute then whisk until smooth and glossy. If necessary, gently heat in the microwave for a few seconds until melted.
- Allow the ganache to cool for 30 minutes, then cover tightly and let it sit at room temperature for at least 2 hours until set.
- Scoop small teaspoons of the ganache, roll into smooth balls, and freeze them for 15 minutes to firm up.
- Combine peanut butter, maple syrup, almond flour, powdered sugar (if using), and salt in a bowl until well mixed. Freeze for 15 minutes.
- Roll heaped tablespoons of the mixture into balls, flatten them, place a truffle inside, and shape into an egg.
- Place the eggs on a parchment-lined baking sheet and freeze until firm.
- Melt the white chocolate and coconut oil in a heat-safe bowl over simmering water. Stir in food coloring to desired shade.
- Dip each egg into the melted chocolate, tapping to remove excess, and place them back on parchment to set.
- Mix cocoa powder with hot water, then use a brush to flick speckles over the eggs for decoration.
