- 10 oz oaxaca cheese
- 2 tsp avocado or olive oil
- 1 cup corn, fresh
- 4 oz can hatch green chiles
- 1 tsp taco seasoning
- 11 oz bag tortilla chips, for serving
Instructions
- Heat your grill to medium heat.
- Cut the Oaxaca cheese in half into a 1-inch thick block. Add oil to a cast iron skillet and place the cheese in the center.
- Surround the cheese with corn and Hatch chiles. Sprinkle with taco seasoning.
- Place the skillet on the grill for about 20 minutes, until the cheese melts.
- During the last 5 minutes, warm the tortilla chips in a pan on the grill, tossing occasionally.
