  • salt and pepper to taste (¼-½ teaspoon per pound)
  • 1 tablespoon (2g) fresh rosemary
  • 2 large cloves garlic, crushed
  • 1 teaspoon (4g) Creole seasoning (or paprika)
  • 1 teaspoon (1g) fresh thyme
  • 1 teaspoon (2-3g) white pepper
  • 1 tablespoon (15ml) olive oil
  • 1 tablespoon (14g) unsalted butter
  • 34 tablespoons (30-40g) minced shallot
  • 1 clove garlic, minced
  • â…“ cup (80ml) cognac (or beef broth)
  • ½ cup (118ml) beef broth
  • 1½ teaspoons (7g) Worcestershire sauce
  • 12 tablespoons (12-24g) cracked peppercorns
  • ½ cup (118ml) heavy cream
  • 1 teaspoon (5-6g) Dijon mustard
  • 1 tablespoon (3g) minced chives

Instructions

  1. Season the lamb chops with salt and pepper. Set aside.
  2. Blend or crush rosemary, garlic, Creole seasoning (or paprika), thyme, and white pepper in a food processor or mortar and pestle. Add olive oil and mix.
  3. Rub the herb mixture onto each lamb chop evenly.
  4. Place the seasoned chops in an airtight container in the fridge and marinate for at least an hour or preferably overnight.
  5. Bring the lamb chops to room temperature for about 30 minutes before grilling. Drain any excess marinade.
  6. Heat your grill or cast-iron grill pan until hot.
  7. Grill the lamb chops for 3½-5 minutes per side until browned to your desired doneness.
  8. Let the chops rest for about 10 minutes before serving, with peppercorn sauce.
