- 4 ears fresh corn on the cob husks on
- 4 tbsp butter room temperature
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp kosher salt
- ¼ tsp onion powder
- ¼ tsp dried thyme
- ¼ tsp cayenne pepper
- 2 tbsp grated parmesan cheese
- ¼ cup chopped green onions
Instructions
- Soak the ears of corn (husks on) in a large bowl of water for at least 30 minutes. Use cans to weigh them down if needed.
- In a small bowl, mix the softened butter with all the seasonings until fully combined.
- Preheat your grill to medium heat, around 350°-375°F.
- Pull back the husks on each ear of corn without removing them completely. Remove the silk from each corn ear.
- Spread about 1 tablespoon of the Cajun butter mixture evenly over the kernels of each ear.
- Pull the husks back over the corn and tie them closed with string.
- Grill the corn for 25-30 minutes, turning every 5-6 minutes until it's cooked through. Note that the husks may brown, which is normal.
- Take the corn off the grill and let it cool slightly before handling.
- Peel back the husks and discard them before serving.
- Top the corn with grated Parmesan cheese and chopped green onions before serving.

For a stronger flavor, let the corn soak longer than 30 minutes.
Feel free to adjust the spice levels by adding more cayenne pepper or other spices in the butter.
You can use frozen corn if fresh corn isn’t available, but grilling with husks works best with fresh.
