  • 2 medium acorn squash
  • 4 tablespoons (60g) unsalted butter
  • 1 teaspoon (3-4g) ground cinnamon
  • ½ teaspoon (1-2g) ground nutmeg
  • ½ teaspoon (1-2g) ground ginger
  • ½ teaspoon (1-2g) chili pepper (optional)
  • ½ teaspoon (3g) salt (adjust to taste)
  • 2 tablespoons (40g) maple syrup (adjust to taste)
  • ¼ cup (30-40g) finely chopped nuts (such as walnuts, pecans, sunflower seeds, etc.)

Instructions

  1. Clean the grill grates and oil them with a paper towel dipped in vegetable oil.
  2. Preheat a gas grill on medium-high heat or prepare a charcoal grill until the coals are ashy white.
  3. Rinse the acorn squash and dry them thoroughly.
  4. Cut the squash in half lengthwise and scoop out the seeds. Slice into 1-inch wedges or uniform pieces for even cooking.
  5. Arrange the slices in a single layer on a greased and parchment-lined baking sheet.
  6. Melt the butter and mix with cinnamon, nutmeg, ginger, and optional chili pepper in a small bowl.
  7. Brush the squash slices with half the melted butter and sprinkle the spice mixture and a little salt on top.
  8. Once the grill is hot, place the squash slices on the grates and grill for 4-5 minutes on one side.
  9. Flip the slices, brush with remaining butter and maple syrup, and grill until tender, about 5 more minutes.
  10. Remove from the grill, garnish with chopped nuts, and serve with extra melted butter and maple syrup on the side.
