Ingredients

  • Pot of water for blanching
  • 1 Tablespoon salt
  • 12 ounces fresh green beans ends trimmed
  • 2 Tablespoons salted butter
  • 2 medium shallots sliced
  • 3 Tablespoons sliced almonds
  • ¼ teaspoon salt
  • 1/8 teaspoon coarse ground pepper
  • 3 cloves garlic minced
  • 1 teaspoon lemon juice freshly squeezed

Instructions

  1. Bring a pot of water with salt to a boil.
  2. Add the green beans and boil for 3-4 minutes until tender crisp.
  3. Strain the water and rinse the beans in really cold water.
  4. Drain really well to remove excess water.
  5. Add the butter to a heavy bottomed or cast-iron skillet and heat over medium heat.
  6. Add the shallots and sauté until softened, about 4-5 minutes.
  7. Increase the heat slightly and add the green beans, almonds, salt, and pepper; toss with tongs for about 2 minutes until the green beans are blistered.
  8. Add the garlic and lemon juice and toss for an additional minute until the garlic is fragrant and browned.
  9. Remove from the heat and serve warm.
