Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • ½ cup plain greek yogurt
  • 4 cloves garlic minced or pressed
  • 2 tablespoons extra-virgin olive oil
  • juice of 1 small lemon add zest to make it extra lemony
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin

Instructions

  1. Gently pound chicken breasts to an even thickness if using, and trim any excess fat.
  2. In a large bowl or ziplock bag, mix together yogurt, garlic, olive oil, lemon juice (adding zest if desired), oregano, thyme, salt, paprika, and cumin.
  3. Add chicken to the mixture and coat thoroughly. Refrigerate to marinate for at least 2 hours or up to 24 hours.
  4. When ready, take the chicken out of the fridge and let it sit at room temperature for 20 minutes.
  5. For grilling, cook over high heat until charred and the internal temperature reaches 160-165ºF, flipping halfway, for about 8-12 minutes for breasts or thighs, or 4-8 minutes for tenders. Avoid overcooking!
  6. For baking, arrange chicken in a single layer in a lined baking dish and cook at 425ºF until it reaches 160-165ºF, for 14-25 minutes depending on size. Do not overcook!
  7. For air frying, preheat the air fryer to 375°F, lightly coat the basket, and cook chicken in a single layer for 10-14 minutes, flipping halfway, until it reaches 165°F.
