Ingredients

  • 1 lb ground chicken
  • 1 large egg
  • ½ cup panko breadcrumbs
  • ¼ cup crumbled feta
  • ¼ cup red onion, diced finely
  • 2 cloves garlic, minced
  • 2 tablespoons fresh italian parsley, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon dried dill
  • ½ teaspoon salt and pepper to taste
  • 1 tablespoon olive oil
  • chopped tomato
  • cucumber
  • red onion
  • feta
  • tzatziki

Instructions

  1. Preheat the oven to 400℉ and line a large baking sheet with parchment paper.
  2. In a large bowl, combine all meatball ingredients except the olive oil and mix gently until well combined.
  3. Scoop mixture into 1½ inch meatballs and place them on the baking sheet. Brush the meatballs with olive oil.
  4. Bake for 18-20 minutes or until the meatballs reach an internal temperature of 165℉ and are no longer pink.
  5. Serve warm with diced tomato, cucumber, red onion, feta cheese, and tzatziki sauce.
