  • 60 g granulated sugar
  • 50 g unsalted butter softened
  • 1 large egg
  • 7 g fine sea salt
  • 150 g light brown sugar
  • 115 g unsalted butter
  • 80 g maple syrup
  • 60 g heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • 180 g chopped pecans lightly toasted

Instructions

  1. Combine flour, milk, sourdough starter, egg, sugar, and salt in a large bowl. Mix until a shaggy dough forms and rest for 20-30 minutes.
  2. Gradually add softened butter to the dough while mixing on low speed until smooth and elastic, then let rest for another 30 minutes.
  3. Perform 2-3 sets of stretch and folds, letting dough rise until 30-50% larger, typically 5-7 hours at 72°F.
  4. Toast chopped pecans in the oven or skillet until fragrant, then set aside to cool.
  5. Prepare caramel in a saucepan by combining brown sugar, butter, maple syrup, cream, cinnamon, and salt until melted and bubbling; let cool before adding most of the pecans.
  6. Line a baking dish with parchment, spread one-third of the caramel on the bottom, and add pieces of dough on top. Proof for 2-3 hours until puffy.
  7. Preheat oven to 400°F. Add the remainder of the caramel and pecans on top of the dough. Use fingers to incorporate caramel into the dough.
  8. Bake for 24-30 minutes, rotating halfway, until golden brown and caramel is bubbling. Cool in the pan for 10-15 minutes before serving.
