Ingredients

  • 3/4 cup pineapple juice
  • 3/4 cup whole milk
  • 1 tablespoon+ 1 teaspoon (12g) active dry yeast
  • 3/4 cup + 1 teaspoon (167g) granulated sugar
  • 2 large eggs, room temperature
  • 4 tablespoons softened butter
  • 1 teaspoon (5g) vanilla extract
  • 2 teaspoons (11g) salt
  • 5 1/2 to 5 3/4 cups (up to 705g) freshly milled hard white wheat flour
  • Egg wash: 1 large egg mixed with 1 tablespoon cold water
  • 2 tablespoons (28g) melted butter for brushing on top

Instructions

  1. Warm the milk to 105–110°F and combine it with the yeast and 1 tablespoon of sugar in a stand mixer bowl. Let sit for 10 minutes until foamy.
  2. Add eggs, pineapple juice, remaining sugar, softened butter, vanilla, salt, and 5 1/2 cups of flour. Mix until no dry flour remains.
  3. Cover the dough and let it rest for 15 minutes.
  4. Knead the dough for 8 to 10 minutes, adding more flour a tablespoon at a time if necessary.
  5. Cover the dough and let it rise until doubled, about 45–60 minutes.
  6. Prepare a 9×13 inch baking dish with parchment paper or cooking spray.
  7. Divide the dough into 15 equal pieces and shape each into a smooth ball.
  8. Arrange the rolls in the baking dish, leaving 1/2 inch between them. Cover and let rise until doubled, about 45–60 minutes, while preheating the oven to 350°F in the last 20 minutes. Brush on egg wash if using.
  9. Bake the rolls for 20-23 minutes until golden brown and the center reaches 180-185°F.
  10. Optionally, brush warm rolls with melted butter.
