  • 2 large eggs
  • 1 3/4 cups buttermilk 420 g
  • 1/4 cup butter, melted 57 g
  • 1/4 cup honey 85 g

Instructions

  1. Preheat the oven to 375°F. Grease an 8×8-inch baking pan.
  2. In a large bowl, whisk together the freshly milled soft wheat flour, cornmeal, baking powder, baking soda, and salt.
  3. In another bowl, combine the eggs, buttermilk, melted butter, and honey if desired.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing.
  5. Allow the batter to rest for 10 minutes for hydration purposes.
  6. Gently stir the batter again, then pour it into the greased baking pan.
  7. Bake for 28-30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
