Instructions
- Preheat the oven to 375°F. Grease an 8×8-inch baking pan.
- In a large bowl, whisk together the freshly milled soft wheat flour, cornmeal, baking powder, baking soda, and salt.
- In another bowl, combine the eggs, buttermilk, melted butter, and honey if desired.
- Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing.
- Allow the batter to rest for 10 minutes for hydration purposes.
- Gently stir the batter again, then pour it into the greased baking pan.
- Bake for 28-30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Cool for 5-10 minutes before slicing and serving.
