  • Total Time: 1 hour 14 minutes
  • Yield: 12 servings 1x

Ingredients

Scale
  • 2 cups freshly milled soft white wheat flour (229g)
  • 2/3 cup freshly milled hard white wheat flour (91g)
  • 3/4 cup unsweetened cocoa powder (64g)
  • 1 3/4 cups granulated sugar (372g)
  • 2 teaspoons baking powder (8g)
  • 1 1/2 teaspoons baking soda (7g)
  • 1 teaspoon salt (7g)
  • 3 large eggs room temperature
  • 3/4 cup sour cream (180g) room temperature
  • 1/2 cup avocado oil (122g)
  • 1 cup buttermilk room temperature
  • 2 teaspoons vanilla extract (10g)
  • 1/2 cup hot water
  • 2 cups unsalted butter (4 sticks)
  • 5 1/2 cups powdered sugar (651g)
  • 1 cup unsweetened cocoa powder (85g)
  • 3/4 teaspoon salt (4g)
  • 1 tablespoon vanilla extract (15g)
  • 1/2 cup heavy cream (120g)

Instructions

  1. Preheat the oven to 350°F. Grease two 9-inch round cake pans and line the bottoms with parchment paper.
  2. In a large bowl, mix the soft white wheat flour, hard white wheat flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt thoroughly.
  3. In another bowl, combine the eggs, sour cream, avocado oil, buttermilk, and vanilla extract, whisking until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  5. Gradually add the hot water to the mixture while mixing at low speed until the batter is smooth.
  6. Allow the batter to rest for 10 minutes to ensure the flour hydrates properly.
  7. Evenly distribute the batter between the two prepared pans.
  8. Bake for 24-27 minutes, checking doneness with a toothpick inserted into the center.
  9. When a few moist crumbs cling to the toothpick, the cakes are ready. If you find wet batter, bake an additional minute or two.
  10. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely before frosting.
