Ingredients

  • 4 tablespoons olive oil
  • 5 cups onions sliced thinly
  • 1/4 teaspoon salt
  • 2/3 cup white wine
  • 2 tablespoon all purpose flour
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1/2 tablespoon minced garlic
  • 1/4 cup good dry red wine
  • 64 ounces beef broth low or no salt
  • 1/4 teaspoon black pepper
  • 1 French baguette sliced (or gluten free bread)
  • 1 ½ cup gruyere or provolone cheese shredded or sliced

Instructions

  1. In a large dutch oven, heat olive oil. Stir in onions and salt. Cover and cook onions for 30 minutes, stirring every 5 minutes.
  2. Add white wine and sauté for an additional 15 minutes until the wine is absorbed and onions are soft and brown.
  3. Stir in flour, thyme, bay leaves, and minced garlic. Cook over low heat for about 2 minutes to combine.
  4. Add red wine and cook briefly for about 1 minute.
  5. Whisk in beef broth vigorously to dissolve the flour. Bring to a boil, reduce to simmer, and cook partially covered for 25 minutes. Remove thyme and bay leaves. Adjust seasoning with salt and pepper as needed.
  6. Toast baguette slices in a 375℉ oven on a baking sheet until crisp, about 3 minutes.
  7. Preheat the broiler on low. Ladle soup into oven-proof bowls, top with two slices of toasted baguette and a handful of cheese. Broil until cheese melts and is golden brown, about 2 minutes. Serve immediately.
