Ingredients

  • 1 ½ pounds white fish filets (grouper or cod)
  • 12 ounces cold light beer or cold water
  • 1 ¼ cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon dried dill or parsley
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • 1 quart fry oil (peanut, canola, vegetable)

Instructions

  1. Cut the fish fillets into 1-1 ½ inch nuggets and place them in a mixing bowl.
  2. Pour cold beer over the fish nuggets and allow them to soak as you prepare the remaining ingredients.
  3. Heat a large cast-iron skillet over medium heat and add 1 inch of oil.
  4. In another mixing bowl, combine all-purpose flour, salt, dill, onion powder, garlic powder, and cayenne pepper, mixing well.
  5. When the oil reaches 350°F, start breading the fish nuggets in small batches.
  6. Lift 6-10 pieces of fish out of the beer, shake off excess liquid, and place them in the flour mixture. Coat well and shake off excess flour.
  7. Carefully place the breaded fish in the hot oil and stir immediately to prevent sticking.
  8. Fry the nuggets for 3-5 minutes until golden brown, adjusting the heat to maintain the temperature.
  9. Line a holding plate with paper towels and transfer fried nuggets to it, sprinkling with additional salt.
  10. Repeat frying until all fish nuggets are cooked and serve warm.
