- 1 ½ pounds white fish filets (grouper or cod)
- 12 ounces cold light beer or cold water
- 1 ¼ cups all-purpose flour
- 2 teaspoons salt
- 1 teaspoon dried dill or parsley
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
- 1 quart fry oil (peanut, canola, vegetable)
Instructions
- Cut the fish fillets into 1-1 ½ inch nuggets and place them in a mixing bowl.
- Pour cold beer over the fish nuggets and allow them to soak as you prepare the remaining ingredients.
- Heat a large cast-iron skillet over medium heat and add 1 inch of oil.
- In another mixing bowl, combine all-purpose flour, salt, dill, onion powder, garlic powder, and cayenne pepper, mixing well.
- When the oil reaches 350°F, start breading the fish nuggets in small batches.
- Lift 6-10 pieces of fish out of the beer, shake off excess liquid, and place them in the flour mixture. Coat well and shake off excess flour.
- Carefully place the breaded fish in the hot oil and stir immediately to prevent sticking.
- Fry the nuggets for 3-5 minutes until golden brown, adjusting the heat to maintain the temperature.
- Line a holding plate with paper towels and transfer fried nuggets to it, sprinkling with additional salt.
- Repeat frying until all fish nuggets are cooked and serve warm.
