  • 2 medium sweet onions thinly sliced
  • 16 oz pizza dough
  • 4 oz fig jam
  • 12 oz low-moisture mozzarella cheese shredded
  • 2 oz prosciutto
  • 1 cup arugula

Instructions

  1. Heat a drizzle of olive oil in a skillet over medium-low heat.
  2. Add the thinly sliced onions and cook for 30-35 minutes, stirring occasionally, until soft and caramelized.
  3. Preheat your oven to 500°F, or the maximum temperature your oven allows, placing a pizza stone inside if using one.
  4. Let the dough rest at room temperature for about 30 minutes before stretching it into a roughly 12-inch circle.
  5. Brush the dough with olive oil and transfer it to a pizza pan or directly onto the preheated stone.
  6. Par bake the crust for 5 minutes before removing it from the oven.
  7. Spread fig jam over the par-baked crust, then top with mozzarella and caramelized onions.
  8. Slide the pizza onto the stone and bake for 8-10 minutes until the crust is golden and cheese is bubbling.
  9. Remove from oven and finish with sliced prosciutto and arugula.
