- 1 lb. coarsely chopped ham
- 2/3 cup mayo
- 2 t dijon mustard
- 1 t horseradish
- 2 tsp. worcestershire sauce
- 2 tsp. green tabasco sauce (or other hot sauce of your choice)
- 1/2 cup finely chopped onion or green onion
- 1/2 cup finely chopped celery (about one large stalk of celery)
- 1 t fresh-squeezed lemon juice
Instructions
- Trim any visible fat or rind from the ham, whether using leftover ham or a ham steak.
- Cut the ham into small cubes and place them in a food processor with the steel blade.
- Pulse the ham a few times until it’s in small, uniform pieces, avoiding overprocessing for a slightly chunky texture.
- Finely chop the onion and celery, using green onion if storing for several days.
- Transfer the ham to a bowl and mix in mayo, Dijon mustard, horseradish, Worcestershire sauce, green tabasco, chopped onion or green onion, chopped celery, and fresh lemon juice.
- Stir until all ingredients are well combined.
- Alternatively, pulse all ingredients in the food processor for a different texture, but prefer mixing by hand to keep it chunky.
- Serve the spread as a filling in low-carb pita bread, stuffed into celery, as an appetizer in cucumber slices, or with low-carb crackers.
- Store in the fridge, where it will keep for at least a week.
