Ingredients

  • 1 lb. coarsely chopped ham
  • 2/3 cup mayo
  • 2 t dijon mustard
  • 1 t horseradish
  • 2 tsp. worcestershire sauce
  • 2 tsp. green tabasco sauce (or other hot sauce of your choice)
  • 1/2 cup finely chopped onion or green onion
  • 1/2 cup finely chopped celery (about one large stalk of celery)
  • 1 t fresh-squeezed lemon juice

Instructions

  1. Trim any visible fat or rind from the ham, whether using leftover ham or a ham steak.
  2. Cut the ham into small cubes and place them in a food processor with the steel blade.
  3. Pulse the ham a few times until it’s in small, uniform pieces, avoiding overprocessing for a slightly chunky texture.
  4. Finely chop the onion and celery, using green onion if storing for several days.
  5. Transfer the ham to a bowl and mix in mayo, Dijon mustard, horseradish, Worcestershire sauce, green tabasco, chopped onion or green onion, chopped celery, and fresh lemon juice.
  6. Stir until all ingredients are well combined.
  7. Alternatively, pulse all ingredients in the food processor for a different texture, but prefer mixing by hand to keep it chunky.
  8. Serve the spread as a filling in low-carb pita bread, stuffed into celery, as an appetizer in cucumber slices, or with low-carb crackers.
  9. Store in the fridge, where it will keep for at least a week.
