Ingredients

  • 6 eggs, hard boiled
  • ½ cup cream cheese, softened
  • 1 cup mayonnaise
  • 2 teaspoons white vinegar
  • 2 teaspoons dijon mustard
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 2 tablespoons cornichons, drained and minced
  • 1 tablespoon chives, for garnish
  • smoked paprika, for garnish
  • crudité, crackers or crostini, for dipping

Instructions

  1. Cut the 6 eggs in half, separating the yolks from the whites.
  2. Mash the egg yolks in a small bowl until smooth and set aside.
  3. In a stand mixer, beat the softened ½ cup cream cheese until smooth. Mix in the 1 cup mayonnaise, followed by the mashed egg yolks.
  4. Add 2 teaspoons white vinegar, 2 teaspoons Dijon mustard, 1/2 teaspoon ground white pepper, 1/2 teaspoon kosher salt, 1/2 teaspoon smoked paprika, and 1/2 teaspoon garlic powder. Stir to combine.
  5. Finely chop the egg whites and fold them into the mixture along with the 2 tablespoons cornichons.
  6. Garnish with additional smoked paprika or 1 tablespoon chives, if desired.
  7. Cover and chill until ready to serve. Serve with crudité, crackers, or crostini.
