Ingredients

  • 1 tablespoon butter
  • 1 tablespoon flavorless oil
  • 3 large eggs
  • 1 tablespoon heavy cream or milk
  • ¼ cup diced smoked ham
  • ¼ cup diced bell pepper any color
  • ¼ cup shredded cheddar cheese
  • 1 dash cayenne pepper or paprika for mild
  • salt and pepper

Instructions

  1. Dice the ham and bell pepper, and shred the cheese. Set a bowl aside for the eggs. Crack the eggs into the bowl, add cream, and beat until frothy.
  2. Heat a nonstick skillet over medium heat. Melt butter in the skillet, then add diced onions and bell peppers. Sauté for 2-3 minutes until softened. Add the ham and stir for 1 more minute, seasoning generously with salt, pepper, and cayenne pepper.
  3. Lower the heat, add oil (or more butter) to the skillet, ensuring to coat the bottom to prevent sticking.
  4. Pour the beaten eggs into the skillet, sprinkle with salt and pepper, and gently push the eggs towards the center to fill in gaps with the wet egg.
  5. Once the eggs are almost cooked, top with shredded cheddar cheese. Gently roll or fold the omelet, allowing the heat to melt the cheese.
  6. Slide the omelet onto a plate and serve hot, with optional sides like home fries, salsa, or sour cream.
