  • 2 store-bought pie dough rounds
  • 68 slices THICK cut bacon, approx. 10 ounces
  • 1 lb. sweet onion, peeled and coarsely chopped
  • 1/2 lb. frozen chopped spinach
  • 6 large eggs, room temperature
  • 1/2 cup whole milk, room temperature
  • 1 3/4 cups heavy cream, room temperature
  • 1/4 tsp Kosher salt
  • 1/2 tsp ground white pepper
  • 1/4 tsp nutmeg
  • 4 ounces Gruyere cheese, grated

Instructions

  1. Roll out the 2 pie dough rounds until large enough to fit a 9-inch springform pan.
  2. Place rolled dough in the pan, ensuring it reaches the top edges without hanging over.
  3. Poke the bottom and sides of the dough with a fork about 15 times.
  4. Chill the springform pan in the fridge for 20 minutes to 1 hour.
  5. Preheat the oven to 375 degrees F while the dough chills.
  6. Line the chilled dough with parchment and add pie weights or dried beans before blind baking.
  7. Cover the edge of the crust with foil and bake for 15 minutes.
  8. Remove from the oven and cool slightly before taking out the weights and parchment.
