Ingredients
Scale
- 2 cups (300 grams) chopped pitted Medjool dates
- 3/4 cup (170 grams) water
- 1 tablespoon (14 grams) fresh lemon juice
- 1 teaspoon (5 grams) vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of salt
- 3/4 cup (85 grams) chopped pecans
- 1 1/2 cups (180 grams) all-purpose flour
- 1 cup (89 grams) old-fashioned rolled oats
- 3/4 cup (160 grams) packed brown sugar
- 1/2 cup (43 grams) finely shredded unsweetened coconut
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 3/4 cup (170 grams) unsalted butter, melted
- 1 teaspoon (5 grams) vanilla extract
Instructions
- Preheat the oven to 350°F and line a 9-inch square metal baking pan with parchment paper.
- To make the date filling, combine chopped dates and water in a medium saucepan over medium heat. Cook for 5 to 8 minutes until dates soften and form a thick, spreadable paste. Stir in lemon juice, vanilla, cinnamon, and salt, then fold in chopped pecans. Allow to cool for 10 to 15 minutes.
- For the oat crumble, stir together flour, oats, brown sugar, coconut, salt, and baking powder in a large bowl. Add melted butter and vanilla, mixing until crumbly yet cohesive.
- Press two-thirds of the oat mixture into the bottom of the prepared pan, then spread the cooled date filling over it, reaching the edges. Sprinkle the remaining oat mixture on top without pressing it down.
- Bake for 30 to 35 minutes, or until golden brown. Allow the bars to cool in the pan for at least 2 hours before lifting out and cutting into 16 squares.
