  • 3 pounds Frozen Meatballs
  • 20 ounces Pineapple Chunks drained with juice reserved
  • 1 Red Bell Pepper chopped
  • 1 Green Bell Pepper chopped
  • 1 Onion chopped
  • ½ cup Rice Vinegar
  • ½ cup Ketchup
  • ½ cup Brown Sugar
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Cornstarch
  • ¼ teaspoon Ginger Powder
  • Cilantro for topping
  • Sesame Seeds for topping

Instructions

  1. Add the frozen meatballs, pineapple chunks, red bell pepper, green bell pepper, and onion to the slow cooker.
  2. In a bowl, mix the reserved pineapple juice, rice vinegar, ketchup, brown sugar, soy sauce, cornstarch, and ginger powder until smooth. Pour this mixture into the slow cooker.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the meatballs are heated through and reach an internal temperature of 160°F.
  4. Stir the meatballs gently to coat them in the sauce before serving.
  5. Garnish with cilantro and sesame seeds.
