  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 1 Bell Pepper diced small
  • 1 small Yellow Onion diced small
  • 1 tsp Garlic Powder
  • 1 tsp Smoky Paprika
  • 1 tsp Dried Parsley
  • 1 tsp Dried Rosemary
  • 1 tsp Dried Thyme
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions

  1. Preheat your oven to 425°F and place an empty baking sheet inside to preheat.
  2. Cut the potatoes into even, 1-inch pieces, peeling if preferred.
  3. In a large pot, cover the potatoes with cold water and bring to a boil. Cook for 8-10 minutes until al dente, then drain and let sit in the colander for 5 minutes.
  4. Shake the colander to rough up the potato edges for a crispy texture.
  5. In the same pot, melt the butter and olive oil over low heat. Remove from heat, add the drained potatoes, and toss to coat.
  6. Add all the seasonings to the potatoes and gently fold to evenly distribute.
  7. Carefully spread the potatoes on the preheated baking sheet in a single layer, avoiding overcrowding. Roast for 20 minutes.
  8. Flip the potatoes, scatter the sautéed bell pepper and onion over the top, and roast for another 20 to 25 minutes until golden brown and crispy.
  9. During the final roasting time, cook the pepper and onion in the same pot over medium-low heat for about 5-7 minutes.
  10. Once the potatoes are done, toss the cooked peppers and onions over them, garnish with fresh parsley or flaky sea salt, and serve.
