- 1/2 cup cottage cheese
- 1/4 cup freshly grated parmigiano reggiano, or parmesan cheese
- 3 tablespoons pizza sauce
- 1/8 teaspoon dried basil
- 1/8 teaspoon garlic powder
- salt and pepper, to taste
- ¼ cup part-skim mozzarella cheese
- 6 slices turkey pepperoni
- fresh basil leaves, for garnish
Instructions
- Preheat the oven to 425℉ and lightly spray a 16-ounce, oven-safe ramekin with cooking oil.
- In a fine mesh strainer, shake the cottage cheese to remove excess liquid. In a small bowl, mix the cottage cheese, Parmigiano reggiano, pizza sauce, dried basil, garlic powder, salt, and pepper until well combined.
- Transfer the mixture into the prepared ramekin and bake for 10 minutes.
- Top the baked mixture with mozzarella cheese and turkey pepperoni. Bake for an additional 5 minutes until the cheese has melted.
- Remove the ramekin from the oven and let it cool for 5 minutes before serving.
