  • 3 cups baby spinach
  • 6 large eggs
  • ¾ cup cottage cheese
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup shredded cheddar cheese
  • chopped fresh thyme

Instructions

  1. Preheat the oven to 350 degrees. Arrange silicone muffin cups in a muffin tin and lightly grease them.
  2. Brown the bacon in a large skillet over medium-low heat. Add onion and bell pepper, cooking until soft.
  3. Add spinach to the skillet and cook until wilted, then remove from heat. Drain excess grease as needed.
  4. Blend eggs, cottage cheese, salt, and black pepper in a blender for 15-20 seconds until just combined.
  5. Distribute the egg mixture evenly into the muffin cups, topping each with about 1 tablespoon of cheddar cheese.
  6. Divide the bacon mixture into the cups and sprinkle with remaining cheddar cheese.
