This Corn Chowder is a comforting blend of flavors with bacon, cream, and sweet corn. Perfect for a quick dinner or a satisfying meal, it’s homemade goodness in a bowl!

  • Total Time: 1 hour
  • Yield: 6 servings 1x

Ingredients

Scale
  • 6 slices bacon, chopped
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 3 cups peeled and diced potatoes
  • 4 cups corn kernels, fresh or frozen
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon smoked paprika
  • 1 1/2 cups heavy cream or half-and-half
  • 1 cup shredded cheddar cheese, optional
  • Fresh chopped chives, for serving
  • Additional shredded cheese, for serving

Instructions

  1. In a large Dutch oven or soup pot, cook the chopped bacon over medium heat until crisp, then remove and set aside, leaving some grease in the pot.
  2. Add the butter and diced onion to the pot. Cook for 4–5 minutes until the onion is soft and translucent, then add garlic and cook for 30 seconds more.
  3. Sprinkle flour over the onion mixture, stirring until well coated, and cook for about 1 minute.
  4. Slowly add the chicken broth while stirring constantly to avoid lumps.
  5. Incorporate potatoes, corn, salt, pepper, thyme, and smoked paprika. Bring the mixture to a gentle boil.
  6. Reduce heat to medium-low, cover, and simmer for 15–20 minutes until potatoes are fork-tender.
  7. For a thicker chowder, blend a portion of the soup directly in the pot or transfer some to a blender and return it to the pot after blending.
  8. Stir in heavy cream and cheddar cheese (if using), cooking on low heat until the cheese melts. Avoid boiling vigorously after adding cream.
  9. Taste and season with salt and pepper. Serve in bowls topped with crispy bacon, shredded cheese, and chopped chives.
