Instructions
- Preheat the oven to 350 degrees and line two baking sheets with parchment paper.
- In a stand mixer bowl, combine softened butter and sugar, and cream until smooth.
- Add oil, vanilla, egg, and almond flavoring. Mix thoroughly, scraping down the sides as necessary.
- Incorporate flour, cream of tartar, salt, and baking powder. Mix well, ensuring sides are scraped often.
- Divide the dough using a large ice cream scoop into 8 equal discs and place on baking sheets. Bake in the preheated oven for 10-12 minutes or until centers are set. Cool completely before decorating.
- For frosting, in a stand mixer bowl, combine softened butter and powdered sugar, mixing on low until combined.
- Add vanilla, almond, milk, and pink food coloring, starting with a small amount. Mix until combined, then increase speed to medium for 1-2 minutes until smooth.
- Spread a layer of frosting over each cooled cookie.
