- 1 to 1 1/2 pounds boneless, skinless chicken breasts (2 large or 4 small)
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/3 cup all-purpose flour
- 2 tablespoons extra virgin olive oil
- 1 tablespoon butter
- 1/2 pound cremini mushrooms, quartered
- 2 garlic cloves, minced
- 1/2 cup marsala wine dry sherry, or another white wine
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 cup chicken stock
- 1/4 cup milk
- 1/4 cup heavy cream
- Fresh parsley, finely chopped
Instructions
- Prep the chicken by slicing large breasts horizontally into cutlets. Cut smaller breasts likewise.
- Season cutlets with salt and pepper, dredge in flour, and set aside.
- Heat olive oil and butter in a pan over medium-high. Add cutlets, browning for 3-4 minutes each side. Transfer to a plate and repeat for remaining chicken.
- Add mushrooms to the pan, allowing them to sizzle without stirring for about 3 minutes. Scrape the bottom to release browning bits.
- Increase heat and cook mushrooms until liquid evaporates and they begin to caramelize, about 4-6 minutes. Add garlic and stir until fragrant.
- Sprinkle remaining flour, garlic powder, and onion powder over mushrooms. Stir until toasted, about 1 minute. Add marsala, cook until evaporated, then add chicken stock, milk, and cream. Bring to a boil and simmer until thickened.
- Return chicken to the pan, spoon sauce over, and simmer until cooked through. Garnish with fresh parsley before serving.
