  • 1 envelope instant yeast
  • 4 1/2 cups all-purpose flour, plus more if needed
  • 4 large eggs
  • 1 1/4 cups sugar, divided
  • 2 teaspoons coarse salt
  • 1 stick unsalted butter, at room temperature, plus 1/2 stick, melted, and more for dish
  • 2 tablespoons ground cinnamon
  • 1 cup powdered sugar
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Combine warm water, yeast, and 1/2 cup flour in a stand mixer bowl to make a thick paste.
  2. Stir in eggs, 1/4 cup sugar, and salt until combined. Fit the dough hook and add remaining 4 cups flour; knead on medium speed for 4-5 minutes until smooth.
  3. Add room temperature butter and knead until incorporated and dough is smooth and elastic, about 10 minutes. If sticky, add more flour.
  4. Transfer dough to a clean bowl, cover, and let rise until doubled, about 1 1/2 to 2 hours. Punch down to remove air bubbles.
  5. Lightly butter a 9-inch pie plate. In a small bowl, mix remaining sugar and cinnamon.
  6. Roll dough into 1-inch balls, dip in melted butter, then roll in cinnamon sugar. Stack in prepared pie plate to form a dome shape; cover and rise for 1 hour.
  7. Preheat oven to 350°F; place pie plate on baking sheet and bake for 50-55 minutes until golden and firm.
  8. Prepare glaze by whisking together sugar, salt, butter, milk, and vanilla until smooth.
  9. Cool bites for 15 minutes before drizzling with the glaze and serve warm.
