  • 1½ cups semisweet chocolate chips

Instructions

  1. Preheat the oven to 400°F and line a standard muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl, combine the granulated sugar, brown sugar, melted butter, vegetable oil, eggs, vanilla extract, and shredded zucchini.
  4. Mix the dry ingredients into the wet ingredients until well combined, then fold in 1¼ cups of chocolate chips.
  5. Use a 3-tablespoon cookie scoop to portion the batter into the prepared muffin tin. Sprinkle a few chocolate chips on top of each muffin.
  6. Bake the muffins until they are set and a toothpick inserted in the center comes out clean, though melted chocolate may be present.
