  • 2 cups (200g) rolled oats
  • 1 ½ (150) quick oats
  • 1 cup (140g) whole raw almonds, coarsely chopped
  • ¼ cup (40g) sunflower seeds
  • ¼ cup (25g) cacao nibs (optional – can replace with more seeds)
  • 3 tablespoon (18g) cocoa powder
  • 1 tablespoon (5g) ground flax seeds
  • 3 tablespoon (45ml) hot water
  • 3 tablespoon (45ml) olive oil
  • â…“ cup plus 1 tbsp (130g) honey
  • ¼ teaspoon kosher salt
  • ¼–½ cup (42-85g) mini dark chocolate chips

Instructions

  1. In a large bowl, combine rolled oats, quick oats, chopped almonds, sunflower seeds, and cacao nibs. Stir well to blend.
  2. In a small bowl, mix cocoa powder and ground flax seeds. Gradually add hot water to create a smooth mixture, then incorporate olive oil, honey, and salt.
  3. Pour the cocoa mixture over the oat mixture and mix thoroughly until every ingredient is evenly coated.
  4. Spread the mixture evenly onto a baking sheet, pressing it down firmly.
  5. Place the baking sheet in a cold oven and set the temperature to 350°F. Bake for 10 minutes without disturbance, then rotate the pan and continue baking for another 5 to 10 minutes until golden brown.
  6. Once golden, turn off the oven but leave the granola inside for an additional 10 minutes to crisp up. Add mini dark chocolate chips on top immediately after removal from the oven.
  7. Let the granola cool completely before breaking it into clusters using a spatula or flat wooden spoon.

Notes

For looser granola, toss it halfway through the baking process when you rotate the pan.
