Ingredients

  • 12 medjool dates, pitted
  • 11/2 cups puffed quinoa
  • 1 cup dark chocolate, melted
  • 2 tsps unrefined organic coconut oil

Instructions

  1. Place each date into one muffin cup of a 12-cup muffin tray and press down to create a base.
  2. Melt the dark chocolate with coconut oil in the microwave in 30-second increments, stirring after each increment, or use a double boiler.
  3. In a medium bowl, combine the puffed quinoa with the melted chocolate and mix until well coated.
  4. Spoon the chocolate-covered quinoa into the dates, making sure to distribute it evenly and press down gently to level.
  5. Freeze the mixture for 30 minutes until set.
  6. Once frozen, remove the bites from the muffin tray and they are ready to enjoy!
  7. Store in an airtight container in the refrigerator or freezer for up to 2 weeks.
