- 12 medjool dates, pitted
- 1–1/2 cups puffed quinoa
- 1 cup dark chocolate, melted
- 2 tsps unrefined organic coconut oil
Instructions
- Place each date into one muffin cup of a 12-cup muffin tray and press down to create a base.
- Melt the dark chocolate with coconut oil in the microwave in 30-second increments, stirring after each increment, or use a double boiler.
- In a medium bowl, combine the puffed quinoa with the melted chocolate and mix until well coated.
- Spoon the chocolate-covered quinoa into the dates, making sure to distribute it evenly and press down gently to level.
- Freeze the mixture for 30 minutes until set.
- Once frozen, remove the bites from the muffin tray and they are ready to enjoy!
- Store in an airtight container in the refrigerator or freezer for up to 2 weeks.
