  • 2 large boneless skinless chicken breasts
  • 2 tablespoons olive oil, plus more as needed
  • Salt/pepper
  • 2 teaspoons italian seasoning
  • ½ teaspoon garlic powder
  • ⅓ cup flour
  • ⅓ cup plain breadcrumbs
  • ¾ cup dry white wine
  • 5 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 28 oz. whole peeled tomatoes, preferably san marzano-style
  • ½ cup chicken broth
  • 1 chicken bouillon cube
  • 2 teaspoons honey
  • 1 teaspoon worcestershire sauce
  • ½ teaspoon each: dried oregano, onion powder, mustard powder
  • ¼ teaspoon red pepper flakes
  • 1 cup cherry tomatoes, halved
  • 1 cup freshly grated parmesan, divided
  • 2 tablespoons cold butter
  • Fresh Basil
  • Fresh Parsley

Instructions

  1. Slice the chicken in half lengthwise to create thinner pieces and pound to ½-inch thickness.
  2. Pat dry, rub with oil, and season with salt, pepper, Italian seasoning, and garlic powder.
  3. Combine flour and breadcrumbs and dredge the chicken, ensuring even coating. Let sit to adhere better.
  4. Heat olive oil in a skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden. Remove and set aside.
  5. Deglaze the skillet with wine over medium heat, scraping the bottom. Reduce for 2 minutes, then add tomato paste and cook for 2 additional minutes, followed by garlic for 1 minute.
  6. Add tomatoes with juices and crush to desired consistency. Incorporate chicken broth, bouillon, honey, Worcestershire, oregano, onion powder, mustard powder, and red pepper flakes. Bring to a boil, then reduce to simmer.
  7. Simmer uncovered for 20 minutes, stirring occasionally until sauce thickens. Add cherry tomatoes and simmer for another 5 minutes.
  8. Lower heat and stir in half the parmesan and cold butter. Adjust seasoning with salt and pepper if needed.
  9. Return chicken to the skillet, spoon sauce over, and sprinkle with remaining parmesan. Cover and heat through for 2-3 minutes. Optionally broil in the oven for a melted finish.
  10. Garnish with fresh basil and parsley before serving.
