- 1.5 lbs boneless, skinless chicken breasts
- 3 tablespoons taco seasoning
- 1 cup bell pepper, chopped
- 1 cup onion, chopped
- 1/2 tablespoon jalapeño, deseeded & minced (optional)
- 3 teaspoons garlic, minced
- 1/2 teaspoon salt
- ½ teaspoon black pepper
- ½ cup nonfat greek yogurt
- ½ cup mexican blend cheese or cheddar, divided
- 16 ounces frozen brown rice, uncooked
Instructions
- Preheat your oven to 400 degrees.
- Choose an oven-safe pan (avoid Teflon or plastic handles). Spray with olive oil and heat over medium-high.
- Season the chicken with 2 tablespoons of taco seasoning and brown it on each side for about 2 minutes. Remove from the pan and set aside.
- In the same pan, sauté onion, bell pepper, garlic, and jalapeño (if using) for 2 minutes until translucent.
- Off heat, mix in the frozen brown rice, Greek yogurt, ¼ cup cheese, 1 tablespoon taco seasoning, salt, and pepper. Place chicken on top.
- Cover with foil and bake for 25-27 minutes until chicken reaches 165°F.
- Remove foil, add remaining cheese, and broil until cheese is melted and crisp.
- Cool for 5-10 minutes, garnish with pico and avocado, then serve.

For added spice, increase the amount of jalapeño or add a dash of cayenne pepper.
You can substitute the Greek yogurt with sour cream if preferred.
