Ingredients

  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt divided
  • 15 ounces tomato sauce
  • 1 1/2 cups chicken stock
  • 3 cups chicken cooked and shredded
  • 1/2 teaspoon black pepper
  • 4.5 ounces diced green chilies drained
  • 15 ounces black beans drained and rinsed
  • 12 flour tortillas 6-inch size
  • 3 cups colby jack cheese shredded

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Heat olive oil in a saucepan over medium heat, add diced onion, and cook for 4 to 5 minutes.
  3. Stir in minced garlic, flour, chili powder, and cumin, and cook for 1 minute.
  4. Mix in chicken stock and tomato sauce, add 1/2 teaspoon salt, and bring to a simmer.
  5. Let the sauce cook uncovered for 8 to 10 minutes until thickened.
  6. In a bowl, combine shredded chicken, black beans, green chilies, remaining salt, and black pepper.
  7. Ladle 1/2 cup of sauce into the baking dish and arrange 4 tortillas over the bottom.
  8. Spread half of the chicken mixture over tortillas, pour 1 cup of sauce, and sprinkle with 1 cup cheese. Repeat layers.
  9. Top with the final 4 tortillas, pour remaining sauce, and sprinkle with remaining cheese.
  10. Bake uncovered for 25 to 30 minutes until hot and bubbly.
