- 12 ounces penne pasta
- 3 cups chicken breasts cooked, shredded or diced
- 4 cups broccoli florets cut into bite-sized pieces
- 2 cups mozzarella cheese shredded, divided
- ½ cup parmesan cheese freshly grated
- 6 tablespoons unsalted butter
- 4 cloves garlic minced
- 6 tablespoons all-purpose flour
- 3 cups whole milk
- 1 cup heavy cream
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- Pinch of nutmeg
- 1 cup parmesan cheese freshly grated
- Remaining 1 cup mozzarella cheese
- ¼ cup parmesan cheese
- ½ cup panko breadcrumbs
- 1 tablespoon melted butter
Instructions
- Preheat the oven to 375°F.
- Bring a large pot of salted water to a boil and cook the pasta until just shy of al dente, about 1 minute less than the package directions. During the last 2 minutes, add broccoli florets to the pot to blanch them. Drain pasta and broccoli well.
- In a large saucepan over medium heat, melt the butter and add the garlic, cooking for about 30 seconds until fragrant. Whisk in the flour and cook for 1 minute. Gradually whisk in milk and heavy cream, stirring constantly, and simmer for 3 to 5 minutes until the sauce thickens. Season with salt, black pepper, garlic powder, onion powder, and nutmeg. Remove from heat and stir in 1 cup Parmesan cheese until melted and smooth.
- In a large mixing bowl, combine pasta, broccoli, chicken, 1 cup mozzarella cheese, ½ cup Parmesan cheese, and Alfredo sauce. Toss to coat evenly then transfer to a greased 9×13-inch baking dish. Sprinkle remaining mozzarella and ¼ cup Parmesan evenly over the top.
- For a crispy topping, toss panko breadcrumbs with melted butter and sprinkle over the cheese.
- Bake uncovered for 25 to 30 minutes, or until hot and bubbly with golden brown cheese. For extra browning, broil for 1 to 2 minutes just before serving.
