  • 2 ¼ teaspoons instant yeast (1 packet)
  • 1 ¾ cups warm water
  • ¼ cup extra virgin olive oil, plus additional for the pan and topping
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons chopped fresh rosemary
  • 1 teaspoon fresh thyme leaves
  • 2 teaspoons flaky sea salt
  • Freshly cracked black pepper, to taste
  • Freshly grated Parmesan cheese, optional

Instructions

  1. In a large bowl, combine bread flour, kosher salt, instant yeast, warm water, and ¼ cup olive oil. Mix until a sticky, shaggy dough forms without adding more flour.
  2. Cover the bowl with plastic wrap or a towel and let the dough rise in a warm place for 2–3 hours until doubled in size.
  3. Generously drizzle olive oil into a 9×13-inch baking pan, covering the bottom and sides.
  4. Gently transfer the risen dough into the pan and stretch it towards the edges with oiled fingertips. If it resists, let it rest for 10–15 minutes before trying again.
  5. Cover the pan and let the dough rise for another hour until puffy. Preheat the oven to 425°F.
  6. Drizzle olive oil over the surface of the dough and create dimples using your fingertips.
  7. Press halved cherry tomatoes into the dough and sprinkle rosemary, thyme, flaky salt, and black pepper on top.
  8. Bake for 25–30 minutes until the focaccia is golden brown and the tomatoes are roasted.
  9. Remove from the oven, drizzle with additional olive oil, and sprinkle with Parmesan cheese if desired. Cool for 10 minutes before slicing and serving.
