This Cheesy Zucchini Bake is a delightful mix of zucchini and yellow squash layered with herbs and melty cheese, making it a perfect comfort food for a quick and healthy dinner.

Ingredients

  • 2 medium zucchini, cut in slices or half-moon slices
  • 2 medium yellow squash, cut in slices or half-moon slices
  • 4 t chopped fresh basil
  • 2 t thinly sliced green onion
  • 1/2 tsp. dried thyme
  • 3/4 tsp. garlic powder
  • 1 cup grated mozzarella cheese
  • 1/2 cup coarsely grated parmesan
  • salt and fresh ground black pepper to taste

Instructions

  1. Preheat the oven to 350F/180C and spray an 8" x 8" or 8" x 11" baking dish with olive oil or non-stick spray.
  2. Wash and slice the zucchini and yellow squash into half-moon slices.
  3. Wash the basil, dry it, and chop or slice it finely.
  4. Slice the green onions thinly.
  5. In a large bowl, mix the sliced squash, chopped basil, green onions, thyme, garlic powder, 1/2 cup of mozzarella, and 1/2 cup of Parmesan. Season with salt and pepper.
  6. Transfer the mixture to the baking dish and bake uncovered for 25-30 minutes, or until the vegetables are mostly tender.
  7. Once nearly done, sprinkle the remaining mozzarella and more Parmesan on top, if desired, and return it to the oven.
  8. Bake for another 10-15 minutes until the cheese is melted and golden brown, and zucchini is fully cooked. Serve hot.
  9. Leftovers can be refrigerated but are typically consumed quickly!
