- 2 medium zucchini, cut in slices or half-moon slices
- 2 medium yellow squash, cut in slices or half-moon slices
- 4 t chopped fresh basil
- 2 t thinly sliced green onion
- 1/2 tsp. dried thyme
- 3/4 tsp. garlic powder
- 1 cup grated mozzarella cheese
- 1/2 cup coarsely grated parmesan
- salt and fresh ground black pepper to taste
Instructions
- Preheat the oven to 350F/180C and spray an 8" x 8" or 8" x 11" baking dish with olive oil or non-stick spray.
- Wash and slice the zucchini and yellow squash into half-moon slices.
- Wash the basil, dry it, and chop or slice it finely.
- Slice the green onions thinly.
- In a large bowl, mix the sliced squash, chopped basil, green onions, thyme, garlic powder, 1/2 cup of mozzarella, and 1/2 cup of Parmesan. Season with salt and pepper.
- Transfer the mixture to the baking dish and bake uncovered for 25-30 minutes, or until the vegetables are mostly tender.
- Once nearly done, sprinkle the remaining mozzarella and more Parmesan on top, if desired, and return it to the oven.
- Bake for another 10-15 minutes until the cheese is melted and golden brown, and zucchini is fully cooked. Serve hot.
- Leftovers can be refrigerated but are typically consumed quickly!
