- 1 tbsp olive oil
- 1 medium red onion diced
- 1 tbsp minced garlic
- 2 pounds lean ground beef or ground turkey/chicken
- 1½ tbsp chili powder
- 2 tsp paprika
- 2 tsp ground cumin
- 2 tsp ground oregano
- 1 tsp onion powder
- ¾ tsp kosher salt
- ½ tsp black pepper
- 1 16-oz bottle taco sauce, divided or salsa
- ½ cup low-sodium chicken or beef broth
- 2 cups shredded cabot pepper jack cheese divided
- 1 12-oz. box jumbo pasta shells
- ¼ cup chopped green onions
- 1 roma tomato diced
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced onions and sauté for 3-4 minutes. Stir in minced garlic and cook for another 1-2 minutes.
- Add ground beef, breaking it up with a wooden spoon and cooking for about 5 minutes.
- Mix in chili powder, paprika, cumin, oregano, onion powder, salt, and black pepper. Cook for an additional 2-3 minutes until the beef is mostly done.
- Incorporate 1 cup of taco sauce and broth, then reduce heat and simmer for 8-10 minutes until sauce thickens.
- Remove from heat and stir in 1 cup of shredded pepper jack cheese. Set aside.
- Boil pasta in a large pot of salted water according to package directions until al dente. Drain and rinse in cold water.
- Preheat oven to 350°F.
- Spray a 9”x13” casserole dish with nonstick spray. Spread ~¼ cup of taco sauce in the bottom.
- Stuff each shell with ~2 tablespoons of the beef mixture and place in the baking dish.
- Drizzle remaining taco sauce over the shells.
- Cover with foil and bake for 20 minutes. Uncover, sprinkle with remaining cheese, and bake for an additional 5-10 minutes until cheese melts.
- Garnish with green onions and diced tomatoes before serving.

Substitute ground turkey or chicken for the beef for a lighter version.
