  • 13.25 ounces box vanilla cake mix plus ingredients on the box: usually eggs, oil, and water
  • 1 tablespoon apple pie spice
  • 1 teaspoon pure vanilla extract
  • 21 ounces apple pie filling roughly chopped
  • 1 cup caramel sauce (store-bought) plus extra for drizzling
  • 2 cups heavy whipping cream cold
  • â…“ cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • ¼ cup crushed pecans optional but encouraged

Instructions

  1. Preheat your oven to 350°F and prepare a 9×13-inch baking pan with nonstick cooking spray.
  2. In a large mixing bowl, combine the cake mix with the ingredients from the box, adding in 1 tablespoon of apple pie spice and 1 teaspoon of vanilla extract. Beat for 2 minutes until smooth.
  3. Pour the batter into the prepared baking pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool for about 10 minutes.
  4. Once slightly cooled, poke holes with the end of a wooden spoon in a grid pattern across the cake. Let it cool completely.
  5. Warm 1 cup of caramel sauce slightly if needed, then pour it into the holes in the cake. Save the remaining caramel for drizzling.
  6. Chop the apples in the pie filling and spoon it evenly over the top of the cake.
  7. In a separate bowl, beat the cold heavy whipping cream with â…“ cup of powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form. Spread this whipped cream mixture over the cake.
  8. Sprinkle crushed pecans on top and drizzle the remaining caramel sauce over the cake. Chill in the refrigerator for 1 hour before slicing.
  9. Once chilled, cut the cake into squares and serve.
