  • 1/2 cup firmly packed brown sugar
  • 1 cup butter, softened
  • 3 (8 ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 3 Granny Smith apples, peeled, cored and finely chopped (about 3 cups)
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup firmly packed brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup quick cooking oats
  • 1/2 cup butter, softened
  • 1/2 cup caramel topping for drizzling after baked

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine 2 cups flour and 1/2 cup brown sugar in a medium bowl. Cut in 1 cup softened butter until the mix is crumbly. Press evenly into a greased 9×13 pan and bake for 15 minutes until lightly browned.
  3. In a large bowl, beat 3 packages of softened cream cheese with 3/4 cup sugar until smooth. Add 3 eggs one by one, mixing in 1 1/2 teaspoons vanilla extract before pouring over the warm crust.
  4. In another bowl, mix 3 chopped Granny Smith apples, 2 tablespoons sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Spoon this apple mixture over the cream cheese layer.
  5. Prepare the streusel topping by mixing 1 cup brown sugar, 1 cup flour, 1/2 cup oats, and 1/2 cup softened butter until well combined. Sprinkle on top of the apples.
  6. Bake for 40-45 minutes until the filling is set. Allow to cool to room temperature and then refrigerate for up to 5 days. These bars can be frozen for up to 4 months.
  7. Drizzle with caramel topping before serving cold.
