  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 large egg
  • 1 cup buttermilk
  • ¼ cup vegetable oil
  • 2 tsp fresh lime zest (about 1 lime)
  • 2 tbsp fresh lime juice (about 1 lime)
  • ¼ cup coarse sugar (such as sparkling sugar or turbinado sugar)
  • 2 tbsp fresh lime juice (about 1 lime)
  • 1 tbsp granulated sugar

Instructions

  1. Preheat the oven to 350°F.
  2. Spray a 9”x5” loaf pan with nonstick cooking spray and set aside.
  3. In a medium bowl, combine flour, sugar, baking powder, and salt, stirring until well mixed.
  4. In a separate bowl, whisk together the egg, buttermilk, vegetable oil, lime zest, and lime juice until blended.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  6. Transfer the batter into the prepared loaf pan, smoothing the top with an offset spatula if needed.
  7. Sprinkle the coarse sugar evenly over the top of the batter.
  8. Bake for 50-55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out mostly clean.
