- 1¾ cups all-purpose flour
- ¾ cup granulated sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1 large egg
- 1 cup buttermilk
- ¼ cup vegetable oil
- 2 tsp fresh lime zest (about 1 lime)
- 2 tbsp fresh lime juice (about 1 lime)
- ¼ cup coarse sugar (such as sparkling sugar or turbinado sugar)
- 2 tbsp fresh lime juice (about 1 lime)
- 1 tbsp granulated sugar
Instructions
- Preheat the oven to 350°F.
- Spray a 9”x5” loaf pan with nonstick cooking spray and set aside.
- In a medium bowl, combine flour, sugar, baking powder, and salt, stirring until well mixed.
- In a separate bowl, whisk together the egg, buttermilk, vegetable oil, lime zest, and lime juice until blended.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Transfer the batter into the prepared loaf pan, smoothing the top with an offset spatula if needed.
- Sprinkle the coarse sugar evenly over the top of the batter.
- Bake for 50-55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out mostly clean.
